The base decides the button. Full-fat dairy suits Ice Cream, protein and low sugar bases suit Lite Ice Cream, custards with yolks suit Gelato, and fruit or juice with sugar suits Sorbet.

Fat and sugar keep ice crystals small and the texture soft. A full-fat base of cream, milk and sugar is the easiest to spin smooth on the Ice Cream program.
Protein shakes, skim milk and sugar-free bases freeze harder and spin powdery more often. The Lite Ice Cream program is meant for them, and many need a Re-spin with a splash of milk.
A cooked custard with egg yolks suits Gelato on models that have it. Fruit purees and juice with some sugar suit Sorbet. On the Deluxe, thin high-water bases such as juice suit Italian Ice or Slushi.
Common mistakes
- Cutting all the sugar from a sorbet and expecting it to spin smooth.
- Adding mix-ins before the base is creamy; run Mix-in last.
