Why sugar-free pints freeze harder
Sugar does more than sweeten ice cream. Dissolved sugar lowers the freezing point of the water in the base, so at freezer temperature some of it stays liquid. That liquid is what lets the Creami paddle turn frozen particles into something creamy. Take the sugar out and more of the water freezes solid, so the block is harder and the paddle shaves it into powder.

Keto vanilla base for a 16 oz pint
For a 24 oz Deluxe pint, multiply each amount by 1.5. Allergens: contains milk and tree nuts (almond). Use a nut-free milk if needed. Taste the base before freezing; frozen food tastes less sweet, so it should taste slightly too sweet as a liquid.

Stabilizers and flavor variations
A small dose of xanthan gum or guar gum, about 1/8 teaspoon per 16 oz pint, binds water and reduces iciness. Too much makes the texture gummy.
