Storing and refreezing Ninja Creami pints

Why refrozen Creami pints set hard
A Creami base is designed to freeze into a solid block and be shaved smooth on demand. When you put a spun pint back in the freezer, the air and texture created by the paddle do not hold. The pint freezes solid again, often harder and icier than a scoop of churned ice cream. That is normal. You do not need to eat it as a brick; the machine is built to process it again.
How to store a half-eaten pint
The flat top is the important step. A pint with peaks, a crater from spooning or a tilt freezes unevenly, and the paddle hits the high spots hard on the next spin. That can make noise, leave chunks or stop the machine. See Ninja Creami not working if it does stop.

Scrape the ice cream down from the sides of the pint.

Smooth the top flat and level with the back of a spoon. Remove any hump or crater.

If you added mix-ins, push them below the surface so they do not stick up.

Snap on the storage lid.

Set the pint upright on a level freezer shelf and freeze at least overnight, ideally about 24 hours.
Re-spinning a refrozen pint
Take the pint out, remove the lid and check that it is level. Run the same program you used the first time, such as Ice Cream or Lite Ice Cream, then Re-spin if it comes out crumbly. If it is still dry, add 1 to 2 tablespoons of milk and Re-spin again. Pints with mix-ins may break the mix-ins into smaller pieces on a second spin; if you want chunks, add fresh mix-ins and use the Mix-in program at the end. Our re-spin guide explains when to stop.
Note.Do not process a pint that is filled above the MAX line. If leftovers plus a new mix-in sit higher than the line, scoop some out first.
The freezer temperature to aim for
Ninja recommends a freezer between -7 and 9 F for Creami pints. The usual food storage target for home freezers is 0 F, which sits in that range. A freezer much colder than -7 F makes pints so hard they tend to powder, while one warmer than about 9 F may leave the center soft. A freezer thermometer is the easiest way to know.

How long pints keep and food safety
Ice cream stored at 0 F stays safe a long time, but quality drops. Frost forms on the surface, flavors pick up freezer odors and ice crystals grow. Most home cooks aim to finish a pint within about 1 to 2 weeks. Keep the lid on and press plastic wrap on the surface if the pint will sit longer.
If a pint fully melts, do not simply refreeze it. A dairy base that sat above 40 F for more than 2 hours should be thrown out. A pint that softened but stayed cold, such as one left in the sink for 15 minutes, can be leveled and refrozen. Bases made with cooked custard follow the same rule.
