Classic vanilla soft serve base

Microwave the cream cheese for about 10 seconds to soften it, then whisk in the sugar and vanilla until smooth.

Whisk in the cream and milk until the sugar dissolves.

Pour into a Swirl pint up to the MAX line.

Lid on, freeze level for about 24 hours.

Install the pint and choose Soft Serve. Dispense into a cone or cup when the program finishes.

- 1 cup whole milk
- 1/3 cup sugar
- 1 tablespoon softened cream cheese or instant vanilla pudding mix
- 1 teaspoon vanilla extract
Note.Lumps of undissolved cream cheese or powder can clog the dispenser. Whisk or blend the base until completely smooth.
Fruit whip, frozen yogurt and protein bases
Fruit Whip: pour a 15 oz can of pineapple or peaches in syrup into the pint, or blend 2 cups of ripe fruit with 1/3 cup sugar and a squeeze of lemon. Freeze about 24 hours and choose Fruit Whip. Pineapple in syrup makes a popular dairy-free swirl.
Swirled Frozen Yogurt: whisk 1 1/2 cups plain Greek yogurt with 1/3 cup sugar or honey and a splash of milk, or use sweetened vanilla yogurt. Freeze and choose Swirled Frozen Yogurt.
CreamiFit: a ready-to-drink protein shake poured to the MAX line, optionally with 1 teaspoon to 1 tablespoon of instant pudding mix. Freeze and choose CreamiFit. See Creami protein ice cream.
Frozen Custard: heat 1 cup whole milk, 3/4 cup cream and 1/3 cup sugar, temper into 3 egg yolks, then cook gently, stirring, until it coats a spoon at about 170 to 175 F. Strain, chill, fill to the MAX line and freeze. Choose Frozen Custard.
Tips for a clean swirl
- Freeze the pint level with the lid on. A domed or tilted block processes unevenly.
- Do not overfill past the MAX line; overfilled pints can push base where it should not go.
- Dispense right after the program ends, while the texture is at its best.
- Pull the handle with steady pressure and turn the cone slowly to build the swirl.
- If the soft serve comes out crumbly, the base was likely too lean or too cold. Next time add a little fat, sugar or a stabilizer.
- If it comes out runny, the base may have too much sugar or alcohol, or the freezer may be running warm.
Mix-ins and toppings
Soft serve dispensing works best with a smooth base, so add chunky mix-ins on top instead of inside. Sprinkles, crushed cookies, chopped nuts, sauces and fresh fruit all work as toppings. Fine powders like cocoa or malted milk powder can be whisked into the base before freezing.

Cleaning after soft serve

Why is my Swirl soft serve crumbly? The base was likely too lean or the pint too cold. Add fat, sugar or a stabilizer next time, or let the pint sit out 5 to 10 minutes before processing.
Can I use 24 oz Deluxe pints in the Swirl? The Swirl is listed with 16 oz pints. Use the pints made for your model.
