First: paddle or bowl, which one should turn?

Not every machine turns the paddle. On popular Cuisinart freezer bowl models like the 1.5-quart ICE-21, the motor turns the bowl and the mixing arm (the paddle) stays still, held in place by the lid. If the bowl spins and the paddle does not, that is how it is meant to work. On many compressor machines, such as Whynter and Breville models, the motor turns the paddle inside a fixed bowl. On the KitchenAid attachment, the mixer drives the dasher while the frozen bowl stays on the mixer.

So the question is really whether anything is moving. If nothing turns at all, or the part that should turn stops partway, use the causes below.

Common causes of a stopped paddle

Start at the top. The first two rows cover most cases, and neither one means the machine is broken.

    Turn the machine off and unplug it. Do not push or turn the paddle by hand while the motor is trying to run.

    Look at the texture. If the batch is thick like soft serve and has been churning 15 minutes or more, it is probably finished.

    If there is a hard frozen ring on the wall and liquid in the middle, the base froze in place. Scrape the ring loose with a plastic or silicone spatula, never metal, and restart with the motor running before you pour.

    Check the fill level against the manual. Spoon some out if the base is near the rim.

    Remove the lid and paddle and reassemble. On Cuisinart models, make sure the mixing arm sits in the center of the bowl and the lid locks onto it.

    On compressor machines, read the display or indicator. Some models stop the paddle when the mix reaches a set hardness or when motor protection detects strain.

Note.Unplug the machine before you reach into the bowl or remove the paddle. Do not chip at a freezer bowl with a knife; damaging the inner wall can let the coolant leak.

Freezer bowl machines: the frozen ring

The most common reason a freezer bowl machine stalls in the first minutes is a base that froze to the wall before the bowl started turning. A well-frozen bowl is extremely cold. If you pour the base in and then turn the machine on, a thick layer can lock against the wall and jam the paddle. Cuisinart's instructions are to turn the machine on first and pour the base in through the spout while it runs.

The base itself should be cold from the fridge, ideally chilled for several hours or overnight, but not partly frozen. A base that is warm makes a thin, slow churn; a base that has ice in it jams sooner. Compressor machines: auto-stop and overload protection

Compressor machines are meant to keep going until the ice cream is thick, and many have a feature that stops the paddle on purpose. Some, like the Breville Smart Scoop, let you pick a hardness and stop when it is reached. Others have a motor protection function that stops the paddle when the mix gets too hard to turn, while the compressor may keep cooling. Both are normal behavior, described in the manuals.

If the paddle stops in the first few minutes while the mix is still liquid, that is not auto-stop. Check that the bowl is seated on its drive, the paddle is pushed fully onto the shaft and the lid is closed. If it still will not turn with an empty bowl, the drive or motor may need service. Is the Cuisinart paddle supposed to spin? On the common Cuisinart freezer bowl models, no. The bowl turns and the mixing arm stays still. If the bowl is turning, the machine is working.

Why did my ice cream maker stop after 20 minutes? The base most likely got thick enough to stall the paddle, or a compressor model's auto-stop kicked in. That usually means it is done. Move it to a container and freeze it for a couple of hours to firm.

Can I help the paddle by pushing it? No. Turn the machine off first. Forcing the paddle while the motor runs can strip gears or crack the paddle.

Why does the paddle stop and start? On some compressor machines, motor protection pauses the paddle when the mix is very thick. If it happens with a liquid base, check the seating of the bowl and paddle and contact the manufacturer if it continues.
